Our olive trees grow alongside our vines.

Planted in the vineyards surrounding our Syrah and Cabernet Franc blocks at 400 to 480 meters above sea level, our olive trees share the same mountain air, the same ancient soil, and the same organic care as our grapes. At harvest, every olive is picked by hand — carefully, deliberately — to avoid any cracking or bruising that would expose the fruit to oxidation and compromise the oil.

From our hands to the press within hours. We cold press at a certified organic facility nearby, preserving every drop of flavor, aroma, and nutritional value that the olive worked all season to develop.

The result is an extra virgin olive oil that is fresh, grassy, and beautifully balanced.

How to enjoy: Pour it generously over labneh with a pinch of za'atar. Into your zaatar mix. And most importantly — on your mankoushe, straight from the oven.
